Tom's Salted Caramel tart

For those of you with a sweet tooth, here is Tom’s favourite recipe for sweet success. Tom met Jess (our intern in 2020) at SOUL and they have been together ever since - sweet SOUL love!! They are both now living in Oklahoma, USA where she is from - spreading the SOUL and sweet caramel love from there. Tom sends this recipe from them to us………SWEET AS!

Ingredients:

For the base:

  • 100g dates

  • 200g oats

  • 100g of nuts of choice (almonds, cashews, walnuts)

  • 2 tbsp water

For the Caramel

  • 300g dates

  • 200g nut butter (peanut or almond)

  • 5-10 tbsp water

  • A generous pinch of salt

  • Optional extra 100g coconut oil for a firmer caramel when chilled

For the chocolate on top

  • 400g dark chocolate (Whittakers works well)


*if using dried dates, soak them in warm water for around five minutes before blending

Method:

For the base: 

Blend the nuts and oats in a food processor until they’re ground into a fine, flour-like consistency. Then add the dates and water and blend until everything starts to come together - this should take around 2 minutes.

Line a 20cm spring form cake tin with baking paper. Pour the base mixture into the cake tin and spread it out evenly and compactly with the back of a spoon. 

For the caramel:

Add all the ingredients into the food processor and blend until it all becomes super smooth. This takes a while (5-10 minutes) and you may have to add a bit more water if it doesn’t blend well. You should end up with a super smooth and luscious caramel. 

When the caramel is done, spread it over the base in a very even way so the chocolate will sit on top nicely. 

For the chocolate:

Melt the chocolate in a bain-marie or a microwave and pour over the top of the caramel. To ensure an even spread, you can pick the tin up and move it around to spread it out evenly.


Place the tart into the fridge for around 1 hour until the chocolate is set and then garnish with coarse sea salt. And make sure to cut the cake with a hot knife to stop the chocolate from breaking.
